Roman shoots get cucina romana — cacio e pepe, carbonara, amatriciana, saltimbocca alla romana, supplì. These come from Cinecittà-adjacent kitchens that have served the studio since the era of Ben-Hur, Cleopatra and La Dolce Vita. Neapolitan and Campania units along the Amalfi Coast get pizza from wood-burning ovens, fresh mozzarella di bufala, and seafood from the morning Pozzuoli and Mergellina markets. Tuscan shoots draw on Chianina bistecca, fresh ribollita, pappardelle al cinghiale, and Maremma producers. Sicilian crews get arancini, sarde a beccafico, caponata, and Etna wines. Sardinian units get porceddu, pane carasau, and fregola con arselle.

The Slow Food and farm-to-table traditions fit naturally with green catering. Our EUR invoicing carries full IVA records back to the production accountant for tax-credit sign-off.

In practice the caterers run hot breakfast, lunch, dinner, late-night seconds, and steady craft services, with a proper espresso bar pulling shots all day.
